Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Ricotta can be used in this recipe.

Instructions

  1. Heat oven to 350°F. 
  2. Combine the flour, oat bran, 1/2 cup brown sugar, baking powder, baking soda, salt and cinnamon in a large bowl. Whisk the ricotta, eggs, plain yogurt, butter and vanilla in another bowl. Stir ricotta mixture into dry ingredients just until moistened. Fold in 1/4 cup blueberries.
  3. Pour batter into a greased 8-inch square baking dish. Sprinkle with remaining brown sugar and blueberries. Bake for 33-40 minutes or until a toothpick inserted near the center comes out clean. Cool completely on a wire rack. 
  4. Fold the whipped cream into blueberry yogurt. Dollop servings with blueberry cream. Garnish with blueberries.
