Instructions

  1. Whisk the eggs, provolone, basil, salt and pepper in a bowl until blended.
  2. Melt butter in a 10-inch ovenproof skillet over medium heat. Add the red onion, red bell pepper and sun-dried tomatoes; cook and stir for 3-5 minutes or until vegetables are crisp-tender.
  3. Reduce heat to medium-low. Stir in sausage and artichokes; heat through. Pour in egg mixture. Cover and cook for 4-6 minutes or until eggs are almost set. 
  4. Broil 4 inches from the heat for 2-3 minutes or until cheese is melted and edges are puffed. Sprinkle with parmesan. Let stand for 5 minutes before serving.
