  1. Sauté pineapple in olive oil in a large skillet over medium-high heat for 1-2 minutes or until just caramelized, flipping once. Remove pineapple from skillet with a slotted spoon.
  2. Sauté red bell pepper and onion in the same skillet over medium-high heat for 5-7 minutes or until tender. Remove from the heat. Season with salt and pepper to taste. Wipe out the pan.
  3. Butter the outside of each roll half with a 1/2 teaspoon butter. Warm the same skillet over low heat. Add two roll bottoms butter side down. Layer each with pepper jack, ham and pineapple slice. Top each with about 1 tablespoon pepper-onion mixture and another pepper jack slice. Cover and cook for 1-3 minutes or until bottom is golden brown. (Watch carefully.)
  4. Add roll tops butter side up. Flip sandwiches; cook, uncovered, 1-3 minutes longer or until cheese is melted. Repeat steps with remaining sandwiches.

Cheesemonger Tip

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Pepper jack is a blend of mild monterey jack cheese with, usually, green and red jalapeno peppers. The peppers give the cheese a spicy kick, and the level of heat varies by the brand.
