Instructions

Mascarpone Whipped Cream:

  1. Beat mascarpone and cream in a large bowl until soft peaks form. Add the honey, vanilla and salt; beat just until mixture is combined. Cover and refrigerate until serving.

Hot Chocolate:

  1. Combine the cocoa, sugar, instant coffee and salt in a small bowl. Bring milk and cream just to a boil in a large saucepan over medium heat, stirring frequently. 
  2. Reduce heat to low; sprinkle in cocoa mixture, whisking constantly until smooth. (Do not boil.) Whisk in vanilla. Gradually whisk in chocolate until melted. Remove from the heat.
  3. Pour hot chocolate into mugs; top with whipped mascarpone cream.
