Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin BellaVitano®, Brie, Gouda, Ricotta or Young Cheddar can be used in this recipe.

Instructions

Berry-Topped Ricotta: 

  1. Combine the berries, sugar and lemon juice in a small bowl; let stand for 30 minutes.
  2. Spoon three-quarters of the ricotta into a serving bowl, and spread the remaining ricotta on biscotti. Top cheese with berries and juice.

Berry Cheeseboard:

  1. Place berry-topped ricotta and biscotti on a serving board. Add the gouda, cheddar and Merlot BellaVitano®. Top brie slices with raspberries and balsamic glaze; arrange on the board. Fill in board with berries, cashews and almonds.

  • Try adding a twist of flavor by adding a splash of liqueur to the macerated berries.
