Gouda Sweet Potato Waffles

Starting with leftover sweet potatoes, these four-ingredient waffles come together quickly. Guests can customize their toppings; it's a new take on a brunch or meatless dinner menu.

Instructions

  1. Combine the potatoes, gouda, eggs and flour in a large bowl. Bake batter (about 1 cup) in a waffle iron, according to the manufacturer’s directions for greasing and cooking, for 4-6 minutes or until golden brown.
  2. Top waffles with black beans, salsa, guacamole, fried eggs and additional gouda.

Recipe Tip

The waffle batter should be thick and spreadable; the amount of cream or milk and butter included in the mashed potato recipe determines its consistency. If the batter is too dry, add an additional egg. If it is too wet, add flour (a tablespoon at a time) until desired consistency.
