Gouda Mashed Potato Waffles

Upcycle leftover mashed potatoes into savory, gouda waffles. The toppings are reminiscent of loaded baked potatoes. Side with eggs and fruit to round out the meal.

  1. Combine the potatoes, gouda, eggs and flour in a large bowl. Bake batter (about 1 cup) in a waffle iron, according to the manufacturer’s directions for greasing and cooking, for 4-6 minutes or until golden brown.
  2. Top waffles with sour cream, bacon, chives and additional gouda.

Recipe Tip

The waffle batter should be thick and spreadable; the amount of cream or milk and butter included in the mashed potato recipe determines its consistency. If the batter is too dry, add an additional egg. If it is too wet, add flour (a tablespoon at a time) until desired consistency.
