Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Bread Cheese (Juustoleipa) can be used in this recipe.

Instructions

  1. Grease grill grate. Heat grill to medium.
  2. Drizzle eggplant and red bell pepper with olive oil in a large bowl; toss to coat. Season with salt and pepper. Transfer vegetables to a lightly greased grill grid. 
  3. Grill vegetables, covered, over medium heat for 10-12 minutes or until tender, turning occasionally. Remove vegetables from the grill grid. Keep warm.
  4. Arrange juustoleipa side by side on grill grid. Grill juustoleipa, covered, for 2-3 minutes on each side or until warmed through. Transfer juustoleipa to a cutting board; cut each slab in half.
  5. Spread pesto on buns; top with juustoleipa and vegetables.
