Instructions

Lime Crema:

  1. Combine the crema ingredients in a bowl. Season with salt to taste. Cover and refrigerate for at least 30 minutes.

Steak:

  1. Cut steak against the grain into four pieces. Combine the lime juice, olive oil, salt, cumin and pepper in a large sealable plastic bag. Add jalapeno pepper and steak; seal bag and turn to coat. Let stand for at least 30 minutes at room temperature or refrigerate overnight, turning occasionally.
  2. Grease grill grate. Heat grill to medium-high.
  3. Grill steak, covered, over medium-high heat for 4-5 minutes on each side or until a thermometer inserted into meat reads 145°F. Transfer steak to a cutting board; tent with aluminum foil. Let rest for 10 minutes. Thinly slice steak against the grain.

Wraps:

  1. Divide lettuce leaves by twos; top each lettuce stack with steak, mango, blue cheese and cilantro. Drizzle with crema. Serve with lime wedges.
