Instructions

Winter Pesto:

  1. Place the asiago, parmesan, walnuts, garlic, lemon zest and lemon juice into a food processor; cover and process until mixture is combined. While processing, slowly drizzle in olive oil until blended. Add kale and spinach; cover and process until mixture is smooth. Season with salt and pepper to taste. Set aside.

Pasta:

  1. Cook pasta according to package directions until al dente. Drain, reserving 1/2 cup hot pasta water.
  2. Return pasta to the pan. Stir in 2 tablespoons butter and reserved pesto; toss to coat. Add reserved pasta water, a tablespoon at a time, until desired consistency.
  3. Melt remaining butter in a large skillet over medium-high heat. Add shrimp; cook and stir for 4-5 minutes or until shrimp turn pink. Remove from the heat. Toss shrimp with pasta. Season with salt and pepper to taste. Garnish with additional asiago and walnuts.
