Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Canela can be used in this recipe.

Instructions

  1. Warm olive oil in a large skillet over medium heat. Add chorizo; cook for 2-3 minutes on each side or until browned. Add garlic; cook and stir for 1 minute.
  2. Add wine and bay leaf. Bring to a boil, stirring to loosen any browned bits from bottom of pan. Cook and stir for 10-12 minutes longer or until wine is reduced to about 1/2 cup. Reduce heat to medium-low. Whisk in honey and oregano. Remove from the heat. Cool slightly. Remove and discard bay leaf.
  3. Thread the olives, Canela and chorizo on picks. Garnish with oregano.

Recipe Tip

This recipe was tested with Rioja wine.

Cheesemonger Tip

Select for cheesemonger info

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

This one-of-a-kind cheese won seven consecutive years at the American Cheese Society Cheese Competition. Seven! Named after the Spanish word for “cinnamon,” this Spanish-inspired aged beauty has a striking basket-weave rind that’s hand-rubbed with a blend of cinnamon and paprika for its signature reddish-orange rind and sweet flavor.
