Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar or Young Cheddar can be used in this recipe.

Instructions

  1. Toss the cheddar, flour, mustard, paprika and cayenne pepper in a large bowl.
  2. Sauté shallot in butter in a saucepan over medium heat until tender. Add garlic; cook and stir for 1 minute. Stir in beer, warm through.
  3. Reduce heat to low; gradually stir in cheddar mixture, a 1/4 cup at a time, until melted. (Do not boil.) Season with salt and pepper to taste.
  4. Transfer cheese sauce to a warm fondue pot. Heat on low to keep warm. Serve with dippers.
