Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Mascarpone can be used in this recipe.

Instructions

Soft Pumpkin-Molasses Cookies:

  1. Heat oven to 350°F. 
  2. Sift the flour, baking soda, cinnamon, ginger, salt and nutmeg in a large bowl.
  3. Beat 1 cup sugar and butter in another large bowl until combined. Add pumpkin and molasses; beat until mixture is blended. Gradually fold into dry ingredients, mixing well after each addition. 
  4. Shape tablespoonfuls of dough into balls. Roll balls in remaining sugar. Place 1 inch apart on parchment-lined baking sheets.
  5. Bake for 15-18 minutes or until light golden brown around edges. Transfer to a wire rack to cool.

Spiced Mascarpone Cream:

  1. Beat cream in a large bowl until soft peaks form. Add the mascarpone, pumpkin and cinnamon; beat just until combined. Add confectioners' sugar, 1 tablespoon at a time, until desired sweetness. 
  2. Dollop cookies with mascarpone cream; dust with cinnamon.
