Frozen Lemony Berry Torte

Keep your kitchen cool with this summertime party dessert. Mascarpone cheese adds luscious creaminess to the lemony layers studded with fresh raspberries and pound cake.

Instructions

  1. Line a 9x5-inch loaf pan with 2 sheets of plastic wrap (one placed horizontally and one vertically), allowing excess to hang over sides. 
  2. Beat mascarpone and sugar in a large bowl until smooth. 
  3. Beat cream in another large bowl until stiff peaks form. Gently fold whipped cream into mascarpone mixture. Fold in lemon zest and lemon juice. Divide mascarpone cream evenly into three bowls.
  4. Gently fold half of the raspberries into one bowl. Spread cream on bottom of prepared pan. Place remaining raspberries into a food processor; cover and puree berries. Fold puree into second bowl. Spread cream over top.
  5. Set aside a 1/2 cup mascarpone cream from the third bowl. Gently fold pound cake into remaining mixture; spread over top. Spread reserved 1/2 cup mascarpone cream over top.
  6. Cover with plastic wrap and aluminum foil, gently pressing down. Freeze for at least 4 hours or until firm.
  7. Remove from freezer. Let stand for 5 minutes. Remove foil. Gently run a knife around sides of pan to loosen. Invert torte onto a serving platter. Discard plastic wrap. Cut into slices.
