New World Cheddar - 2nd Place: 2022 American Cheese Society – Sweet Cheddar category Terrific Trio - Renard’s white cheddar, Gouda, and parmesan. Morel & Leek Monterey Jack - The nutty, earthy flavor of morel mushrooms with the mildly sweet onion-like flavor of leeks, with the creamy, buttery base of Monterey Jack cheese. Door County Cherry Cheddar - Savory and tangy notes of white cheddar with the natural sweet-tart flavors of cherries combine to create a delightful combination. Farmers With Guacamole - A unique fusion of the traditional soft and tangy farmer’s cheese with guacamole’s creamy, fresh, and zesty flavors. The first note is mild and slightly tart due to the farmer’s cheese; this is quickly followed by the rich taste of avocado, then lime, followed by the warmth of jalapeno and a subtle freshness of cilantro.

We will be showcasing our brand-new Summer Truffle Cheddar! Using Italian Summer Truffles this cheese has delicate truffle flavor with a hint of roasted garlic. Other items that will be shown are our Mozza Whips which are long thin pieces of string cheese and a great snack item; our Simply Strawberry Cheddar which is a fabulous spring & summer seasonal; our Aged Cheddar (cured 9-18 months) which placed in the TOP 20 at the 2024 World Championship Cheese Contest; and last but not least our Extra Sharp 10 Year Cheddar which has delicious creamy texture and a crystalline crunch.

Henning Cheese is a family operation crafting traditional artisan and specialty cheese in rural Kiel, Wisconsin, since 1914. Their focus is on quality not quantity. They use fresh milk from small local family dairy farmers and follow slow traditional make procedures. They craft Cheddar, Colby, Monterey Jack, Farmers, Mozza Whips, Cheese Curds and a wide variety of unique and innovative flavors. Under the watchful eye of Master Cheesemaker Kerry Henning and 4th generation family cheesemakers, Joshua Henning and Zachary Henning, Henning Cheese cheeses have won countless awards over the years. Their plant is Level 3 SQF certified and USDA approved. Cheese is available to purchase in retail cuts, 40 lb. blocks and wheels that range from 12-pound midgets to 4000-pound mammoths. Henning Cheese is the only plant that makes mammoth wheels of cheese for store promotions and events.
