Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Blue can be used in this recipe.

Instructions

Champagne Vinaigrette:

  1. Whisk the champagne vinegar, shallots, Dijon mustard, honey and salt in bowl. Slowly whisk in olive oil. Set aside.

Salad:

  1. Toss arugula, apples and radishes in a large serving bowl. Drizzle with reserved vinaigrette; toss to coat. Sprinkle with blue cheese. Serve immediately.
