Corn-Tomato Salsa:



Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Queso Menonita can be used in this recipe.


Corn-Tomato Salsa:

  1. Combine the salsa ingredients in a large bowl.


  1. Sauté mushrooms and onion in olive oil in a large skillet over medium-high heat for 4-6 minutes or until tender. Reduce heat to medium. Add garlic and cumin; cook and stir 1 minute longer.
  2. Reduce heat to low. Sprinkle with queso menonita; cook and stir just until melted. Remove from the heat. Drizzle with truffle oil if desired. Season with salt and pepper to taste.
  3. Top tortillas with mushroom mixture and salsa.

Recipe Tip

Any Wisconsin melting cheese, such as asadero, gouda, monterey jack or muenster, can be substituted for the queso menonita cheese.
