Corn-Tomato Salsa:

  1. Combine salsa ingredients in a large bowl. Set aside until serving.

Tacos:

  1. Warm olive oil in large skillet over medium heat. Add mushrooms and onion; cook and stir for 6-8 minutes or until tender. Add garlic and cumin; cook and stir for 1 minute. Sprinkle with queso menonita; cook and stir for 1 minute longer. Remove from the heat. Drizzle with truffle oil if desired. Season with salt and pepper to taste. Keep warm.
  2. Warm tortillas according to package directions. Spoon mushroom mixture and reserved salsa on top of tortillas. Serve immediately.

Any Wisconsin melting cheese, such as asadero, monterey jack or muenster, could be substituted.
