Wisconsin Cheese Southwestern Pasta Salad Recipe

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Monterey Jack can be used in this recipe.


  1. Cook pasta according to package directions; drain and rinse in cold water. 
  2. Meanwhile, stir 1 cup yogurt and 2 tablespoons lime juice in a small bowl. Cover and refrigerate until serving.
  3. Combine the pasta, black beans, corn and monterey jack in a large bowl. 
  4. Whisk the remaining yogurt and lime juice, salsa and cilantro in another large bowl. Pour over pasta mixture; gently toss to coat. Season with salt and pepper to taste.
  5. Cover and refrigerate for at least 30 minutes or until serving.
  6. Sprinkle with avocados just before serving. Dollop with reserved yogurt mixture. Refrigerate leftovers.
