Instructions

  1. Toss strawberries and sugar in a bowl. Let stand for 20-30 minutes, stirring occasionally, or until berries have darkened and released liquid. Place berries and juice in a food processor or blender; cover and pulse until almost smooth. Transfer to a large bowl.
  2. Beat mascarpone and sweetened condensed milk in a large bowl until combined. Add the cream, vanilla and salt; beat until stiff peaks form. Gently fold mascarpone mixture into the strawberry puree. Spoon into an airtight freezer container. Cover and freeze for at 6 hours or until firm. Remove from freezer 10 minutes before serving.
