Cheese

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Alpine-Style, Emmentaler, Grand Cru® or Little Mountain can be used in this recipe.

Instructions

  1. Combine the swiss, Grand Cru®, Little Mountain, 1 cup wine and lemon juice in a medium bowl. Let stand at room temperature for least 2 hours, or cover and refrigerate overnight. 
  2. Add salt to a large saucepan. Starting in the salt, rub the cut sides of garlic on pan. Discard garlic. Add the remaining wine; bring to a boil over medium heat. Reduce heat to low. Gradually whisk in cheese mixture until melted and mixture is smooth. Season with nutmeg and pepper to taste.
  3. Transfer cheese sauce to a fondue pot, Heat on low to keep warm. Serve with dippers.

Recipe Tips

  • Soaking the cheese, preferably overnight, in wine prior to melting not only adds flavor, but it helps to ensure a smooth fondue.
