Instructions

  1. Cook the turkey, onion and serrano peppers in a Dutch oven over medium heat until meat is no longer pink; drain.
  2. Stir in chicken broth and reserved asiago rind. Bring just to a boil. Reduce heat to low. Simmer, uncovered, for 10 minutes, stirring occasionally. Stir in beans and cumin; cook and stir for 10 minutes longer. Gradually stir in 1 cup grated asiago until melted. Stir in spinach; cook until wilted. Remove from the heat. Season with salt and pepper to taste.
  3. Serve with remaining grated asiago and toppings as desired.

Recipe Tip

Avoid touching face when handling the serrano peppers. Consider wearing gloves, as oils may burn skin.

Cheesemonger Tip

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Eau Galle Cheese was highlighted on the "Today Show" on NBC for their award-winning asiago. Cheesemakers in Wisconsin age asiago to develop sharper, buttery and nutty flavors and a hard texture.
