Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Parmesan can be used in this recipe.

Instructions

  1. Coat a 17 x 12-inch baking pan with cooking spray.
  2. Combine sugar and corn syrup in a microwave-safe, 2-quart bowl. Microwave, uncovered, on high for 5 minutes.
  3. Stir in cashews and salt. Microwave, uncovered, on high for 3 minutes. (Mixture will be hot!) Stir in butter. Microwave on high for 2 minutes longer.
  4. Stir in baking soda and vanilla. (Mixture will foam.) Pour immediately onto prepared pan. Sprinkle with parmesan and dried cranberries. Cool completely. Break brittle into pieces. Store in an airtight container.
