Whipped Feta:

Instructions

  1. Heat oven to 425°F. Line a 17 x 12-inch baking pan with parchment paper.
  2. Whisk the balsamic vinegar, honey, Dijon mustard and thyme in a small bowl. Slowly whisk in olive oil. Season with salt and pepper.
  3. Drizzle grapes with 1/4 cup vinaigrette on prepared pan; toss to coat. Arrange grapes in a single layer. Lightly season with salt and pepper.
  4. Bake for 25-30 minutes or until grapes are softened, turning once.

Whipped Feta:

  1. Place the feta, yogurt, lemon zest and thyme into a food processor; cover and process until mixture is combined. While processing, slowly drizzle in olive oil until desired consistency. Season with pepper to taste.
  2. Transfer whipped feta to a serving bowl. Drizzle with remaining vinaigrette. Top with grapes. Garnish with thyme. Serve with crostini.
