Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar or Cheddar Blue can be used in this recipe.

Instructions

Lemon Dressing:

  1. Melt butter in a small saucepan over medium heat. Add shallots; cook and stir for until 3-4 minutes or until crisp-tender. Sprinkle in thyme and lemon zest; cook and stir for 2 minutes longer.
  2. Transfer to a small bowl. Slowly whisk in olive oil and lemon juice. Season with salt and pepper to taste.

Salad:

  1. Toss arugula with two-thirds dressing in a large bowl. Sprinkle with hazelnuts and dates. Season with salt and pepper to taste; toss to combine.
  2. Divide salad onto four serving plates. Top with Dunbarton Blue®. Drizzle with remaining dressing.
