Wisconsin has an impressive Guinness Book of World Records claim to fame. In 1995, Jim Knaus, President of Weyauwega Star Dairy, made the World Records for making the longest string cheese in the world (1.5 miles long). Strong men and women had to carry it through the town on their shoulders! Jim is clearly passionate about cheese making, and we can tell his passion also includes a great sense of fun. You'll find Jim and the rest of Star Dairy in the tiny central Wisconsin town of Weyauwega, Wisconsin, where the company has been operated by the Knaus Family since 1975. They are artisan cheesemakers specializing in handcrafted Italian cheese such as parmesan, asiago, and romano. Jim was born into cheesemaking. He literally grew up in a cheese vat. His parents put him there so they could watch him while they worked.
