Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Bread Cheese (Juustoleipa) can be used in this recipe.

Instructions

Chipotle Cream:

  1. Combine the chipotle cream ingredients in small bowl. Refrigerate until serving.

Tacos:

  1. Cook the sausage, onion, and poblano pepper in a large skillet over medium-high heat for 10-12 minutes or until meat is no longer pink and vegetables are tender, stirring occasionally; drain. 
  2. Meanwhile, warm juustoleipa in a large, nonstick skillet over medium heat; cook for 2-3 minutes on each side or until warmed through. Transfer to a cutting board; cut juustoleipa into strips.
  3. Top each tortilla with chorizo mixture and juustoleipa. Dollop with chipotle cream. Serve with cilantro, radishes and lime wedges.
