Instructions

  1. Heat oven to 350°F. 
  2. Cream butter and brown sugar in a large bowl until light and fluffy. Add egg yolk and vanilla; beat until mixture is blended. Combine flour and salt in a separate bowl; gradually add to butter mixture, mixing just until combined. Stir in cheddar. (Take care to not overmix.)
  3. Shape dough into 1-inch balls. Roll in walnuts if desired. Place 2 inches apart on parchment-lined baking sheets. Press an indention in the center of each with your thumb or handle of a spoon. Fill each with 1/2 teaspoon jam.
  4. Bake for 11 -15 minutes or until edges are lightly browned. Remove to a wire rack to cool completely.
