Aged Cheddar Thumbprint Cookies

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar can be used in this recipe.

Instructions

  1. Heat oven to 350°F. 
  2. Cream butter and brown sugar in a large bowl until light and fluffy. Add egg yolk and vanilla; beat until mixture is blended. Combine flour and salt in another bowl; gradually add to butter mixture just until moistened. Stir in cheddar.
  3. Shape dough into 1-inch balls. Roll in walnuts if desired. Place 2 inches apart on parchment-lined baking sheets. Press an indention into the center of each with your thumb or handle of a spoon. Fill each with 1/2 teaspoon jam.
  4. Bake for 11 -15 minutes or until edges are lightly browned. Remove to a wire rack to cool completely.
