  1. Heat oven to 350°F.
  2. Cook sausage in a large skillet over medium heat until meat is no longer pink; drain.
  3. Roll out biscuits on a lightly floured surface, each about 6-inches long x 3-inches wide. Sprinkle with fontina, spinach and sausage. Starting at a short end, tightly roll up dough. Pinch seam to seal. Slice each roll into 1-inch pinwheels, using a serrated knife. Place slices cut side down on a parchment-lined 15 x 10-inch baking pan.
  4. Bake for 25-30 minutes or until pinwheels are golden brown and cheese is melted.

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Fontina is considered one of the most versatile cheeses in the world; it's an excellent table and cooking cheese. Wisconsin cheesemakers produce Swedish-style, Italian-style and Danish-style fontina.
