Chorizo, Egg and Pepper Jack Omelet Muffins

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Monterey Jack can be used in this recipe.


  1. Heat oven to 350°F.
  2. Cook the sausage, peppers and onion in a large skillet over medium heat for 7-9 minutes or until meat is no longer pink. Remove sausage mixture to paper towels to drain. Cool for 10 minutes.
  3. Meanwhile, beat eggs in a large bowl. Stir in 1 cup pepper jack and sausage mixture. Fill twelve greased muffin cups with 1/3 cup egg mixture or six greased jumbo muffin cups with 2/3 cup egg mixture. Sprinkle with remaining pepper jack.
  4. Bake for 18-25 minutes for muffin cups or 30-35 minutes for jumbo muffins or until a knife inserted near the center comes out clean and thermometer reads 160°F.
