Barbecue Chicken Mac and Cheese

Wisconsin aged cheddar, smoked gouda and sweet barbecue sauce give this mac and cheese all the smoky flavor of a summer spent around the grill.

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Aged Cheddar or Gouda can be used in this recipe.


  1. Cook pasta according to package directions; drain.
  2. Meanwhile, sauté onion and jalapeno pepper in butter in a Dutch oven over medium heat until tender. Reduce heat to medium-low. Whisk in flour until combined. Gradually whisk in milk and liquid smoke if desired. Bring to a boil; cook and whisk for 2 minutes or until thickened.
  3. Reduce heat to low; gradually whisk in cheddar and gouda until smooth. Stir in the pasta, chicken, barbecue sauce and cayenne pepper; heat through.
  4. Remove from the heat. Season with salt to taste. Garnish with green onions, cilantro and additional barbecue sauce.

Recipe Tip

  • Avoid touching face when handling jalapeno peppers. Consider wearing gloves, as oils may burn skin.
