Key Lime Pie Mini Parfaits

Look for the Proudly Wisconsin Badge when shopping for cheese. Any brand of Wisconsin Mascarpone can be used in this recipe.

Instructions

  1. Beat the mascarpone, sweetened condensed milk and lime juice in a bowl until smooth. Transfer half of the mixture to a pastry bag; set aside. Beat lime zest and green food coloring, if desired, into remaining mascarpone mixture until blended. Spoon into another pastry bag.
  2. Combine graham cracker crumbs and sugar in a small bowl; stir in butter. Sprinkle 1 teaspoon crumb mixture into each 3-ounce glass.
  3. Layer each with 1 tablespoon white mascarpone mixture and 1 tablespoon green mascarpone mixture. Repeat layers, starting with the crumb mixture. 
  4. Top with whipped cream. Sprinkle with remaining crumb mixture. Garnish with lime wedges. Refrigerate until serving.

Recipe Tip

Fresh limes can be substituted for Key limes in the recipe. Four medium limes juiced yields about 1/3 cup lime juice.
