  1. Heat oven to 350°F. Grease and flour a 10-inch (about 12 cups) fluted tube pan.
  2. Combine sugar and lemon zest in a large bowl. Add eggs, one at a time, beating each until well combined. While beating, slowly drizzle in olive oil until blended.
  3. Whisk the milk, lemon juice and vanilla in a bowl. Combine the flour, baking powder, salt and baking soda in another large bowl; gradually add to olive oil mixture alternately with milk mixture, beating each addition until combined. Fold in Merlot BellaVitano®.
  4. Pour batter into prepared pan. Bake for 45-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes in pan before removing to a wire rack to cool completely.

Lemon Glaze:

  1. Combine confectioners’ sugar and lemon juice in a bowl until smooth. Drizzle glaze over the cake.
  2. Serve cake with raspberries and additional Merlot BellaVitano®.

Do you have questions when shopping for cheese? Ask the cheesemonger! A cheesemonger specializes in the buying and selling of high-quality cheese, usually available in the specialty section of a grocery store or cheese shop. Knowledgeable and passionate, a cheesemonger is a go-to resource for cheese varieties and pairings, proper cheese storage and handling, its cooking applications and cheese brand information.

Sartori master cheesemakers created a unique tasting experience—their signature BellaVitano® cheese is handcrafted with merlot wine. In every bite, taste the nutty, brown-butter flavor brightened by fruity notes of berries and plums in this deliciously creamy and complex cheese. It’s no surprise that their Merlot BellaVitano® has won several awards, including Gold medals at the 2015 World Cheese Awards and the 2015 and 2016 International Cheese Awards.
